How did we review Organic Tattva Ragi Dosa mix? What were the parameters we set? 

The taste, texture, convenience, and overall experience were the factors we reviewed this Dosa mix on.

1. Taste

Here, we gauged if or not the innate nutty-earthy flavor of ragi was present. If yes, was it bold and fresh? What about the spices and seasoning, were they balanced? Connecting taste to convenience, were we required to adjust the flavor with some spices or condiments?

2. Texture

How was the dosa mix, lumpy or lump-free? Does it spread evenly? Do the dosas cook in the mentioned time frame, or do they need longer? Were the crisp?

3. Convenience 

What ingredients do we need from our pantry to make the batter? How long does it take to cook the dosa? Is it easy to whip up on a busy morning?

Price + Packaging

The dosa mix comes in a carton. It holds 200 grams of product and is priced at Rs 99/- with a one year shelf life. 

Main Ingredients 

Ragi flour* (34%), Black gram dal* (25%), Semolina*, Refined wheat flour*, Beaten rice*, Edible vegetable oil* (Organic sunflower oil), Salt, Raising agent (INS500 ii), Acidity regulator  (INS296), Contains permitted natural antioxidant (INS307B) are all ingredients used.

How did we make the dosa?

We mixed one cup of the dosa mix with a cup and half of water. It was fairly easy to mix, there were no lumps formed during the batter-making process. Once an even consistency was achieved, we let this rest for five minutes.

A pan was heated with some ghee on a medium flame and the batter was poured and roasted until cooked from both sides.

Aroma + Appearance 

There was no pertinent aroma, but the absence of stale or industrial smells was appreciated. The dosa batter had a brown-grey appearance and on cooking it turned a nice chocolaty brown, like ragi does.

The batter is easy to spread. Make sure the temperature of the tawa is maintained.

Taste + Texture

In under five minutes, the edges started to lift and the dosa had browned from one side. We roasted it for a minute on the other side and served hot.

The characteristic earthiness of ragi was beautifully present here. We could also taste the rich buttery flavor that black dal has. Salt was apt, there were no adjustments needed here. As for the texture, the dosa was crisp, thanks to the use of semolina.
