Organic Tattva Organic Uttapam Ready Mix Review- A Thumbs Down

Organic Tattva, a brand that aims at offering products for a better, healthier, and wholesome life, launched a range of ready-to-use mixes. We reviewed and quite liked their rava idli mix. This led to our Organic Tattva Organic Uttapam ready mix review.

What did we expect from Organic Tattva Organic Uttapam ready mix?

A lip-smacking flavor, authentic texture, clean ingredients, and overall convenience were the focus parameters. We also checked the organic certifications. 

1. Flavor 

Uttapam is prepared using fermented rice batter and dal. This fermented batter has a natural sour taste. The veggies and seasonings further enhance the taste.

We checked to find if the uttapams made from this packaged mix had a fresh and natural taste or did it taste industrial?

2. Texture

Crisp corners but a fluffy, pillow-like soft center- this is the ideal uttapam texture.

Under this parameter, we checked the ingredient list and the caloric values. Is this mix prepared with similar ingredients we’d use at home?

Price & Packaging

The uttapam mix is sealed in a pack that is placed inside a carton. The carton lists all relevant details from ingredients, nutrition values, cooking instructions, serving suggestions, and organic certifications that are easy to read.

A 200-gram pack is priced at Rs 85 and has a shelf life of one year. 

Main Ingredients

Rice* (62%), Black gram dal*, refined wheat flour*, edible vegetable oil* (organic sunflower oil), fenugreek*, salt, raising agent (INS 500 II), acidity regulator (INS 296). 

This also contains permitted and natural antioxidant (INS 307 B)

The asterisk indicates that the ingredients are organic. 

Uttapam is typically prepared using a blend of rice and dal in the batter. This is why the addition of refined wheat flour left us surprised. 

INS 500 II is a raising agent commonly known as baking soda.

INS 307 B is an extract obtained from sunflower oil that works as an antioxidant. 

The brand labels this product as a ‘source of protein’ but it has only 12% protein which is quite low. 

How we prepared and tasted the uttapam

As mentioned on the pack, we added the uttapam mix and water in equal proportions. Once this was mixed into a smooth batter, we let it rest for five minutes and started heating a non-stick tawa on a medium flame. 

Like dosa and uttapam are classically prepared, we sprinkled some water on the tawa, wiped it dry and poured the batter. This was to be spread to a thick-sized, pancake-like shape. 

Another suggestion we followed was adding a tablespoon of chopped onions, tomatoes, fresh coriander and some chopped green chillies. 

For our review, we used the Cello 4 cavity pan dosa tawa. The uttapams were served with sambhar we made using 24 Mantra Organic Sambhar powder.

Taste & Texture

The batter thickened fairly quickly. We had to add some more water and remix it to achieve a thick yet flowy consistency. Our review panel was of the opinion that the use of refined wheat flour may be a contributor to the quick thickening.

Once cooked, the uttapams were not too spongy or soft, they were quite hard. It must be noted that when we say hard, we do not mean crisp. The crisp edges and fluffy soft center was missing. So this was a big thumbs down on the texture and mouthfeel.

Taste-wise, the salt levels were balanced, there was no adjustment needed here. Fermented rice batter usually has a mild yet desirable sourness. It was missing here. Urad dal was the most dominant ingredient in the flavor profile, when we tasted the uttapam without adding veggies. There was no balance of flavors and the overall taste was quite average.

For round two, we added the veggies as suggested and they imparted a freshness and some crunch.
