1. Aroma

Aroma is a crucial parameter when it comes to reviewing ghee. At times, packaged ghee might release a musty or stale smell. We are looking for the signature milky, nutty aroma that is pleasing.

The taste-smell connection forms the foundation of our perception of flavor. Our sense of smell, derived from the olfactory system, picks up volatile molecules released by substances in the environment. However, taste buds located on the tongue and other areas of the mouth are primarily responsible for detecting taste.

How are they connected? The sense of smell is essential to the perception of flavor, while the taste buds are capable of detecting basic flavors. The input from the taste buds and olfactory receptors is combined by our brain to produce the impression of flavor. Ultimately, this connection directly influences our enjoyment of food and beverages.

How does cooking affect the color of ghee? 

Nei Native’s founder, Nitya, shared valuable insights into their ghee production process, highlighting that it’s never undercooked. She stated that most of the ghee that is mass-produced is undercooked for increasing yield. The undercooking process influences the final color of the ghee. While most of the ghee in the market are pale in color, Nei Native’s Cow Ghee has a dark yellow appearance. On the other hand, the A2 Buffalo Ghee by Nei Native has a beige-brown appearance while the ones available in the market are whiter. 

The color difference between Nei Native Ghee and the ones available in the market is indicative of the fact that they never undercook the ghee.

Nei Native Ghee– Detailed Review

How did we review these ghee? 

For the testing process of both these ghee, we followed the same procedure. 

Our testing process details are as follows: 

  • We tried the ghee by applying it over a batch of rotis.
  • Added a small amount of ghee on steamed rice.
  • Lastly, used the ghee as a tadka on moong dal with hing and jeera.

Difference Between Cow ghee & Buffalo ghee? There are several aspects in which Cow ghee and Buffalo ghee differ including – the taste, texture, color, and aroma. 

While Cow ghee has a bright yellow color, Buffalo ghee is white in color. Taste-wise, Cow ghee has a mild,buttery flavor whereas Buffalo ghee is known for its rich and more pronounced flavor. Coming to the fat content, Cow ghee is lighter and has a lower fat content. Buffalo ghee on the other hand has a higher fat content. 

For people looking for healthier alternatives to butter or cooking oils, cow ghee is an excellent pick for you. While buffalo ghee is perfect for those who prefer higher fat content and a richer flavor profile.

1. Nei Native A2 Cow Ghee

Product Highlights 

Nei Native’s cow ghee is priced at Rs. 875 for a net weight of 250 ml. This has 11 months of shelf life. This comes in a glass jar with deep purple color labels. 

This is made from 100% Desi Cow A2 Milk. Per 100 gm, it contains 898.780 Kcal of energy. 

Our Experience 

When we tasted this ghee as is, we found that there was absolutely no sourness. This implies the excellent quality of raw material (curd) used. It is absolutely fresh and of superior quality. 

Appearance-wise, it has a deep yellow color while the texture is daanedaar. This ghee has the signature warming, rich and buttery flavor which is just TOO good. 

What’s the most pleasing aspect? The aroma! This will surely transport you back to granny’s kitchen, where the ghee was freshly churned every few weeks from malai collected from milk fat. 

What is Cow ghee? Cow ghee is ghee derived from cow milk and is a staple ingredient used for Indian cooking.

What’s special about Nei Native’s A2 Desi Cow Ghee? This ghee is handcrafted incorporating the traditional family recipe that has been passed down through generations. The best part is that these are prepared in small batches which is indicative of its high standard of hygiene and purity. The entire process of churning the curd to butter is done manually with hands (bilona).

Our Experience 

As compared to Cow ghee, buffalo ghee has a distinctive aroma which is also very rich. Visually, it has a light brown-beige color. While its texture may not be as thick as cow ghee but it has a daanedaar feel.  

All in all, Nei Native’s Buffalo Ghee excels in terms of its signature aroma, flavor and texture. 

What is Buffalo ghee? Buffalo ghee is clarified butter derived from Buffalo milk. The distinct aroma and texture of this ghee sets it apart from cow ghee. It is creamy, high in fats and has a runny consistency.
