What Is Tomato Ketchup?

Tomato Ketchup is traditionally made using tomatoes, vinegar, sugar and a variety of spices and seasonings. Onion, garlic, ginger, cloves, and celery are some of the other popularly used ingredients for enhancing the flavor. Good ketchup should be sweet, with some tartness. The tangy, sour taste comes from the use of vinegar which essentially balances out the sweetness. We are talking about classic/plain tomato ketchup here. Spicy/hot and sour flavors will taste very different. It is enjoyed with many things, but most preferred with hot fried foods like pakoras, samosas and, of course, French fries.

The earliest recipe of Ketchup is known to come from China where a similar concoction was used to brine and pickle fish. Later, a version of this arrived in parts of present-day Malaysia and Singapore where the English are known to have first tasted it. The recipe, of course, went through several changes to come close to what it is today, but this is how a south-east Asian brining sauce came to be a favorite European, and later American condiment.

Tasting Methodology

We conducted 3 rounds of taste tests to determine the most appealing flavor. These taste tests included in-house writers and contributors of Mishry, along with a set of external guests we invited for the taste test.

All tasting sessions were held blind, i.e. without the tasters knowing what brand they were tasting, and side by side. The tasters tried the sauce as is first, followed by dipping hot Indian snacks (samosas and pakoras) and French Fries into the 6 varieties.

Final Conclusion

All taste-sessions unanimously chose Del Monte as the front runner with Maggi a close second. Del Monte was loved by everyone due to its well-balanced sweet and tangy flavor, smooth, creamy consistency (not watery or too thick) and its fresh aroma. Maggi was also liked by most, except a few who did not prefer the sour-kick and tartness at the end.
