Summary
What works? The crisp, flaky outer covering of the samosa with ajwain and the well-seasoned potato and pea filling inside. These are frozen, deliciously fresh tasting and pack in a lot of convenience.

What are we looking for? We were looking for a tasty aloo-stuffed samosa with a crisp outer covering.
ITC Master Chef Punjabi Samosa was tested on the following parameters –
1. Taste
From the ajwain in the samosa pastry to the amchoor in the aloo stuffing. Each and every spice and their intensity was noted. Individual components and a collective bite – how tasty is the samosa? Do the peas and potatoes taste fresh? How well balanced is the seasoning? Any undesirable aftertaste?
2. Texture
Texture means two things – the crispiness of the samosa shell (pastry) and how well cooked the aloo stuffing is. Are the potatoes soft or undercooked? Do they have a chalky bite? Peas and raisins – do they have apt textures?
The quantity of filling and overall crunch of the samosas was also checked.
3. Other Factors
Price
16 small-sized samosas for Rs 155/-. While not comparing it to halwai-bought samosas, do they prove to be value for money?

ITC Master Chef Punjabi Samosa – Detailed Review
Price and packaging – The ITC Master Chef Punjabi Samosa comes in a tray pack which is sealed with plastic. The tray was further placed in a black poly pack which is not re-sealable. None of the samosas were broken.
A 300 gm pack contains 16 small samosas which is priced at Rs 155/-. This would mean that each samosa is approximately 9 Rupees.
Appearance – The samosas are small in size and have well-defined corners. None of the pieces were broken.
Ingredients include vegetables like potatoes, green peas and green chilli. The outer casing is made of maida. It uses refined sunflower oil. The seasoning includes ginger paste, salt, black salt, curry powder amongst other things.
How can you make these? The pack mentions that these can be cooked using three methods – deep frying, air frying and baking. We used the deep flying method. Without thawing we deep fried the samosas in hot oil for 5-6 minutes as instructed. Make sure the heat is on low as frying them on high can burn the casing too soon without properly heating the center of the samosa.
After deep frying, the samosas have turned a perfect golden brown color and the filling is cooked till the center. We can see ajwain seeds on the casing. Spices like saunf, whole coriander seeds and jeera can be seen in the filing.
Right out of the kadai, the filling will be very hot so bite with caution.
Taste and texture – The samosas have a crisp outer casing with a balanced salt and ajwain flavor.
The filling is primarily roughly mashed potatoes with some peas here and there. Flavor wise, amchoor (dry mango powder), saunf, and sookha dhania were prominent. The chilli isn’t over the top and we like that.
The Punjabi Samosas have a very good overall bite. The crisp casing and soft well-cooked mashed filing inside is superb. They are very fresh tasting and have no lingering industrial aftertaste which can be the case with many frozen foods. Neither do they soak up any oil.
These can be paired with a spicy green chutney or an imli saunth. There are no chutneys that come with this, so you might want to keep some handy.
