Fortune, a brand we commonly associate with oils, also offers varieties of rice grains. Offered in 1 kg pouches and 5 kg bags, we ordered a pouch for our Fortune Biryani Special Basmati rice review.

Fortune Biryani Special Basmati rice is the long-grained variant with a mix of stark white and off-white grains. The grains were quite thick and had a fresh aroma. This thickness ensures the rice is cooked well but still retains that bite. 

As suggested by the brand, the rice can be cooked in three ways- open pot, closed pot, and in a microwave. For both stages of our review, we chose the open pot method. 

Following the water to rice ratio by Fortune, we soaked a cup of rice in cold water for approximately 20 minutes.

Did you know– soaking rice grains prior to cooking helps eliminate the amylopectin content that may negatively impact the texture.

Making the Biryani- 

While the rice was soaking, we mixed some spices with homemade curd and ginger garlic paste for marinating mushrooms.

In a wide mouth pan, we boiled some water, added salt and spices that are commonly used while preparing biryani like star anise, mace, cardamom, clove, and black pepper. 

Once the water came to a boil, we added the soaked rice and let it cook for five minutes. At this stage, the rice was 75% cooked and was drained using a sieve. Here, though the rice grains had fluffed up 100%, they weren’t fully cooked. 

In the same pot, the marinated mushrooms were cooked until 3/4th done. Then we layered the partially cooked rice followed by a generous sprinkle of biryani masala. This was then topped with caramelized onions sprinkle of milk and some ghee.

On the lowest possible heat setting, we let this cook for another 10 minutes with sealed edges. We let it completely cook through before finally serving hot.

Making steamed rice 

Similar to Stage one, we used the open pot cooking method and soaked the rice for the same duration. Once the water came to a boil, we added the soaked and drained rice and let it cook. After six minutes, we drained off the excess water and sprinkled the cooked rice with some salt for taste.

Results- 

When preparing biryani, the rice grains are cooked twice. Owing to the thickness of these grains, the cooked biryani was on point! The grains had cooked evenly and weren’t sticking to one another, nor were they lumpy. A nice bite was retained. Additionally, the grains had soaked up the flavors quite well. 

As for the steamed rice, a floral, nutty aroma made its presence felt. Just like the biryani, the grains had absorbed the salt. Best of all, the already-long rice grains had almost doubled in length after cooking.
