Summary

There is nothing galouti-like in the ITC Masterchef Chicken Galouti Kebab. The seasoning tastes a bit unbalanced, and the texture of these chicken galouti kebabs does not deliver on the promise of a delicious, melt-in-your-mouth galouti kebab. We have definitely reviewed better ITC frozen snacks that impressed with its wonderfully well-seasoned kebabs and tikkis.

Galouti Kebab or Galawat Ke Kebab are extremely popular in India, and rightly so. They are small, round-shaped, melt-in-your-mouth succulent kebabs that are bursting with meaty flavors. Even though galouti kebabs originally are made using minced mutton and tenderized with raw papaya, chicken galouti kebab are quite loved as well. ITC Masterchef brings a wide range of frozen vegetarian and non-vegetarian kebabs that can be cooked at home. We reviewed the ITC Chicken Galouti Kebab to see if the taste and texture come close to the galoutis we usually eat, and if the flavors blend well with the meatiness of the kebab. Here are our findings!

The story behind Galouti Kebab – The story behind the invention of galouti kebab is interesting as well. According to legends, the Nawab of Lucknow lost most of his teeth, but his love for kebabs was far from over. His Rakabdars (gourmet cooks) began experimenting with different flavors and meat. Once done, they came up with the softest, most tender kebabs that the nawab could relish even without his teeth. (Read our Mentor Vir Sanghvi’s fabulous article on Tales of Kebab and Keema)

Quick Review Of ITC Master Chef Chicken Galouti Kebab

Price and packaging – The ITC Master Chef Chicken Galouti comes in black and red pouch packaging. Inside the pack, the small kebabs are placed in a plastic tray with small separators that help prevent the frozen kebabs from sticking to each other. A single tray holds around 15 pieces of kebabs. A 210-gram pack is priced at Rs 170/-.

Appearance – The shape and size of the chicken galouti kebabs is consistent throughout the pack. These aren’t large-sized kebabs. None of the pieces are broken.

How we made it – As per the instructions given on the pack, these chicken galouti kebabs can be cooked using three methods – Tawa cook, air fry and bake. As recommended, we made the kebabs using the tawa cook method. On a heated non-stick pan we splashed some oil and put the kebabs to cook. We flipped them occasionally until they were cooked on the inside. This took about 4-5 minutes.

What To Expect Out Of A Galouti Kebab?

While reviewing frozen food, especially kebabs, we keep a significant margin of expectation between the product and what traditionally-cooked kebabs taste and look like. Because, there is now way a freshly made, hot off-the-tandoor or tawa kebab can be replicated as a ready-to-eat snack. The taste and texture are nearly impossible to replicate. Galoutis are supposed to be soft and should melt in your mouth when you take a bite. Awadhi cuisine is primarily associated with the fresh and delicate taste of spices and tender, succulent meat. These kebabs do not have the smoky char as they are cooked/grilled on a heavy-bottomed pan and not in a tandoor. Galouti kebabs, even vegetarian ones, are served with ulte tawa ka paratha, onion rings, and fresh green chutney.

Taste and texture – The ITC Chicken Galouti Kebabs cooked well and had a lovely sear on both sides of the kebab. These small kebabs plumped up a little, and when we cut them open, we thought that the chicken was very juicy. Texture-wise, these do not melt in your mouth and aren’t even soft enough to be qualified as a galouti. Taste-wise, there is a mild sourness that we didn’t like. There is something amiss about the seasoning, and overall it doesn’t blend well with the kebab. We felt that the ITC chicken galouti kebabs are a tad bit over-salted too.

It would have been better if this pack of kebabs was not labeled as ‘galouti’. If these were labeled as regular Indian spiced chicken kebabs, we wouldn’t have built expectations around the product or even compared it to the original galoutis. The texture and taste left us wanting for more! We have had better ITC frozen foods with wonderfully balanced flavors and matching texture.
