While the seasoning of the stuffing plays a significant role in the overall flavor profile, the outer cover can be a game-changer.
Was the outer cover seasoned or bland? What about the potato stuffing? Was it fresh? Did it retain the bold flavors of spices? Was there any undesirable aftertaste?
2. Texture
We gauged the texture in two stages. One was how crispy the outer casing turned after cooking and two- the stuffing. Have the potatoes been mashed smooth or were they in chunks? What about peas, mashed or whole?
Spices like fennel seeds, ajwain, cumin seeds lend a desirable bite when added whole. Were these crushed, powdered, or added whole?
3. Convenience
From cooking to serving, how did we rate these frozen samosas on convenience?

Price & Packaging
The samosas were packed in a green-colored carton which also held two sachets of chutneys. A 650-gram carton (holding eight pieces) is priced at Rs 220/- and has a shelf life of 18 months.
Main Ingredients
Samosa
Potatoes (42%), wheat flour (26%), refined sunflower oil, water, green peas, interesterified vegetable fat (sesame oil, palm oil), salt, spices (coriander, cumin, black pepper, cardamom, clove, cinnamon).
Pudina Chutney
Sugar (50%), water, dried mango slices, salt, red chilli powder, ginger powder, spices (coriander, cumin, black pepper, cardamom, clove, cinnamon)
Khatti Meethi Chutney
Coriander leaves (34%), water, mint leaves, green chilli, peanuts, cashew, salt, black salt, cumin, fresh lime juice.
How we made them
A key cooking instruction the package mentions is thawing the samosas before deep frying or baking them. This step ensures that the stuffing is properly heated, and not just the outer cover.
Following the instructions, we microwaved 2 pieces of the samosa for 60 seconds before deep frying them. As for the chutney sachets, we microwaved them for half a minute.
PS- the time may vary as per microwave wattage.
Texture
The samosas were quite identical, in terms of shape and size. Thumbs up as no samosa was broken or cracked.
Once the samosas were thawed and deep fried, the crust turned crisp. The crunch was bold. The outer casing was quite thick, but at no point did it feel doughy or crumbly. With a medium spice level, the stuffing had a favorable variety of textures coming from mashed potatoes, bits of peas, and seeds (fennel, cumin). The stuffing didn’t feel dry or chalky, it had a homestyle touch to it. What we liked even more was the stuffing to casing ratio. It wasn’t overloaded, but there were no empty flour pockets too.
The chutneys had a smooth but flowy consistency.
Taste
As for the stuffing, it is safe to say Haldiram’s nailed the seasoning. The salt and chilli were in a beautiful sync. The overall bite of the samosa was fresh to taste, without any undesirable industrial aftertaste.
In terms of flavor, the chutneys really made a mark. The sweetness of the meethi chutney was spot on. It was laced with a peppery heat and a desirable pungency of cloves. The green chutney tasted fresh, minty, and herby with a slight green chilli kick.
