Tawas are heavily used for rotis and parathas in most Indian kitchens. On average a tawa is used once or twice each day during breakfast, lunch or dinner.
How did we test these? We made over a 100 chapatis on each tawa and more than a dozen paranthas, both stuffed and plain. While rotis are dry, parathas involve using a type of fat, mostly ghee, to cook them completely. This also helped us test the tawas for ease of cleaning as fat tends to create a layer on top. We tested both rotis and parathas on the same tawa because no one switches tawas to make these two separately. Do note that these tawas are NOT meant for chillas and omelettes. For that, non-stick tawas are an ideal choice.
We chose eight broad parameters on which we gauged these tawas and tested them in our review lab for over three months.
